When I first heard of the keto diet, I thought the only thing I would be eating would be salads.
I was wrong.
I actually rarely ate salads because to my surprise, there were so many other tasty keto recipes to keep my tummy occupied.
However, as I ventured into my keto journey I knew I needed to find more ways to increase my fiber intake and satisfy my (very intense) cravings for potato and pasta salads.
I also knew it probably wasn’t in my best interest to be eating fat bombs for days even if it was for the sake of ketosis.
